Use the pre-built image in the official Tableau Docker Hub repository. It requires a Server+ entitlement and runtime EULA acceptance. Supply the license and configuration, and mount required drivers or extend the image.
The Linux RPM contains the Bridge client. Create a custom Docker image with this RPM and the required database drivers, then register the client to the Cloud site.
